"These vegan donuts have a similar chewy and puffy texture, but instead of taking a bite of probably some of the worst ingredients for your body — I get to enjoy a healthy vegan donut that is oil- and gluten-free, PLUS made with a delicious plant-based protein for an awesome post-workout treat.
This recipe is roughly inspired by Forks Over Knives’ banana muffins and Chef AJ. Instead of apple sauce & juice, I used sweet potato puree along with other variations. Note: their’s is just as healthy as well!"
3 very ripe bananas, mashed
1 cup gluten free oats, ground into flour
1/4 cup plant-based protein powder, (preferably flavored: vanilla, chocolate, almond, etc).
1 Tbsp flaxmeal (ground flax seeds)
2 Tbsp water
½ tablespoon alcohol-free vanilla
½ tablespoon apple cider vinegar
1 teaspoon aluminum-free baking powder
½ teaspoon sodium-free baking soda
