Vegan Raspberry & Pistachio Brownie

We are excited to share that we have started a collaboration with a Perth based food blogger, Paolla Frias from Amora Sweet & Natural, who is a pastry chef specialised in creating healthy desserts. Here she will share her delicious recipes with us!

Vegan Raspberry & Pistachio Brownie

 Vegan Raspberry & Pistachio Brownie

Ingredients:

150g spelt flour

4 teaspoons cocoa powder

160g coconut sugar

½  teaspoon salt

1 teaspoon vanilla powder

150g dairy-free dark chocolate

½ cup coconut oil (melted)

230ml almond milk (you can use rice or oat milk)

100g crushed pistachios

150g raspberries

Method:

Preheat the oven to 180C and grease a brownie tin with a small amount of coconut oil and baking paper if you like.

In a double-boiler (make sure the bowl is not touching the water) melt the chocolate.

Sieve the flour and cocoa in a bowl, stir in the salt and vanilla. Add the melted chocolate, oil and milk and stir in until all the ingredients are combined. Pour the mixture into the brownie tin and sprinkle the crushed pistachios and raspberries on top. Bake it for approximately 15 minutes. 

Leave to cool before slicing into squares.

Serve it with vegan coconut ice cream!
